The Real Role of Sugar in Baking: The Science Behind Sugar, Texture & Sweetness
Members article
Sugar is one of the most important ingredients in baking, and surprisingly, not just because it makes things sweet.
Over the years, I’ve learned that understanding how ingredients behave is key to developing stable recipes, troubleshooting problems, and becoming a more confident baker. Sugar is definitely one of those ingredients that can change the way you see baking once you understand what it’s actually doing.
Sugar affects so much more than sweetness – from texture and moisture to consistency and shine.
In today’s article, we’ll look at what sugar actually does in baking, the science behind its role in desserts and entremets, why reducing or changing it can significantly affect your final result, and how you can use this knowledge in your own baking.
Don’t worry if you’re new to the science side of baking – we’ll break it down step by step.
What is sugar anyway?
Scientifically speaking, sugar is a type of carbohydrate made up of small molecules that dissolve easily in liquid and provide sweetness and energy.
In baking, sugar is one of the most important functional ingredients because it doesn’t just affect flavor – it also impacts moisture, texture, and structure.
When we talk about sugar in baking, we’re usually referring to ingredients like:
granulated sugar
caster sugar (also known as baker’s sugar, fine sugar, and superfine sugar)
icing sugar (also known as powdered sugar and confectioners’ sugar)
brown sugar
invert sugar
Even ingredients like fruit contain naturally occurring sugars, such as fructose and glucose. The amount and type of sugar varies between different fruits, which is one reason they can contribute differently to the sweetness, flavor, and texture of a recipe.
