As you might imagine from my cake style, I’m a huge Bridgerton fan! Season 4 is coming out very soon, so I wanted to create a themed cake to celebrate the new season.
Inspired by afternoon tea (which to me feels very Bridgerton), I decided to make an Earl Grey–flavored cake.
I personally love using tea flavors in cakes, and this version is truly amazing, incredibly fresh and perfectly paired with lemon. I love all the cakes I make, but this one honestly stands out for its beautiful balance of flavors.
Decorated with colorful flowers and a dusty green glaze, the colors were inspired by Bridgerton, which often showcases florals and pastel-toned dresses.
I hope you love this recipe as much as I do.
Happy baking <3

For extra guidance while baking, watch my step-by-step video tutorial, where I show you how to make the cake from start to finish:
NOTES:
- When you start baking, begin by preparing the vanilla whipped ganache, as it needs time to set before it can be whipped. While it is setting, you can prepare the other layers to save time.
- The ganache needs to be prepared in two separate batches, as the second portion would set before it can be added to the cake.
- This recipe uses a generous amount of Earl Grey black tea to achieve a prominent flavor, so the cake does contain some caffeine. You can always adjust how strong you make the tea infusion to suit your preference.
Day 1
Vanilla Whipped Ganache:
- 3.5 gelatin sheets (1 sheet = 1.75 g, bloom value 240)
- 400 ml heavy cream (min. 35%) (200 ml heated, 200 ml cold)
- 3.5 vanilla beans or 3.5 tsp vanilla paste
- 110 g white chocolate (28%)
- Soak the gelatin in cold water for 5–10 minutes.
- Chop the white chocolate and put it in a large jug.
